Goan Shrimp Balchao


Shrimp balchao a traditional Goan fiery, sweet and sour pickle. The shrimp is cooked in an array of spices to give you a melange of flavors and take you on a taste ride like none other. This yumlecious spicy and tangy in taste pickle will make you want more of it with each bite you take.



Ingredient:-

250 grams Shrimp shelled and de-veined

Oil as required

1/2 tsp turmeric powder

6 garlic cloves thinly sliced

2 tbsp vinegar

1" ginger chopped

1 medium onion finely chopped

10/12 curry leaves

1 tbsp sugar


Masala Paste

15 Kashmiri dry chilies

1/2 tsp turmeric powder

1/2 tsp cumin seeds

1/2 tsp black pepper

6/8 garlic cloves

6/8 cloves 1/2 tsp cloves

1" cinnamon stick

Vinegar as required


Direction:-

In a bowl, add red chilies, garlic, cumin seeds, white vinegar and salt. Give it a light stir and set it aside for 15 minutes. Blend the above mixture in a blender to a smooth paste.

Add turmeric, salt and vinegar in a bowl add shrimp and marinate for 10/15 minutes.

Heat wok on medium flame and add oil when hot add shrimp and deep fry till golden brown and hard approx 15 minutes, remove and keep aside. To the oil add thinly sliced garlic, ginger and curry leaves and fry for 5 minutes add chopped onions and fry till brown add ground spices and cook for 2/3 minutes and fried shrimps and cook till masala thickens, adding sugar, salt as required.

Let the shrimp balchao cool completely for storage in an air tight jar in the refrigerator.

This shrimp pickle will keep in the refrigerator for several days, so it is something you can make ahead and have on hand for guests or enjoy with your meal.
